CREAM OF TOMATO SOUP




Winter is around the corner...there is a nip in the air...

How about a comforting bowl of  healthy and tasty,home made hot 

 Cream of Tomato Soup?


INGREDIENTS

  • RIPE TOMATOES - 6
  • ONIONS(CHOPPED) - 2 CUPS
  • GARLIC - 4 FLAKES
  • BAY LEAF -1
  • CORNFLOUR - 2 TEASPOONS
  • BUTTER- 2 TABLESPOON
  • FRESH CREAM -1 CUP
  • CROUTONS (FRIED BREAD CUBES) -  2 CUPS
  • SALT AND PEPPER - TO TASTE

METHOD

  • IMMERSE THE TOMATOES IN HOT WATER FOR 10 MINUTES OR TILL THE SKIN SPLITS.
  • PEEL OFF THE SKIN. MASH WELL.
  • HEAT ONE TEASPOON OF BUTTER IN A PRESSURE PAN.
  • FRY THE BAY LEAF,GARLIC,ONIONS AND TOMATOES.
  • ADD 5 CUPS OF WATER.
  • PRESSURE COOK UNTIL 3 WHISTLES.
  • REMOVE THE BAY LEAF.
  • PUREE THE MIXTURE WELL AND PASS THROUGH A SIEVE.
  • HEAT THE BUTTER IN A HEAVY PAN. FRY THE CORN FLOUR IN IT. ADD THE SIEVED MIXTURE LITTLE BY LITTLE,STIRRING CONTINUOUSLY TO AVOID FORMING LUMPS.
  • ADD LITTLE SALT AND PEPPER .SIMMER FOR 10 MINUTES.
  • REMOVE FROM HEAT.SERVE HOT.
  • ADD THE FRESH CREAM JUST BEFORE SERVING.(Go easy if you are calorie conscious)
  • TOP THE SOUP WITH A FEW CRUNCHY CROUTONS.
  • YOU CAN ALSO SERVE THE SOUP WITH SOUP STICKS OR HOT ,BUTTERED TOASTS.
