How about a comforting bowl of healthy and tasty,home made hot
Cream of Tomato Soup?
INGREDIENTS
- RIPE TOMATOES - 6
- ONIONS(CHOPPED) - 2 CUPS
- GARLIC - 4 FLAKES
- BAY LEAF -1
- CORNFLOUR - 2 TEASPOONS
- BUTTER- 2 TABLESPOON
- FRESH CREAM -1 CUP
- CROUTONS (FRIED BREAD CUBES) - 2 CUPS
- SALT AND PEPPER - TO TASTE
METHOD
- IMMERSE THE TOMATOES IN HOT WATER FOR 10 MINUTES OR TILL THE SKIN SPLITS.
- PEEL OFF THE SKIN. MASH WELL.
- HEAT ONE TEASPOON OF BUTTER IN A PRESSURE PAN.
- FRY THE BAY LEAF,GARLIC,ONIONS AND TOMATOES.
- ADD 5 CUPS OF WATER.
- PRESSURE COOK UNTIL 3 WHISTLES.
- REMOVE THE BAY LEAF.
- PUREE THE MIXTURE WELL AND PASS THROUGH A SIEVE.
- HEAT THE BUTTER IN A HEAVY PAN. FRY THE CORN FLOUR IN IT. ADD THE SIEVED MIXTURE LITTLE BY LITTLE,STIRRING CONTINUOUSLY TO AVOID FORMING LUMPS.
- ADD LITTLE SALT AND PEPPER .SIMMER FOR 10 MINUTES.
- REMOVE FROM HEAT.SERVE HOT.
- ADD THE FRESH CREAM JUST BEFORE SERVING.(Go easy if you are calorie conscious)
- TOP THE SOUP WITH A FEW CRUNCHY CROUTONS.
- YOU CAN ALSO SERVE THE SOUP WITH SOUP STICKS OR HOT ,BUTTERED TOASTS.
